Thai Cucumber Salad

Ingredients:
  • 1/2 teaspoon crushed red pepper
  • 1/2 to 3/4 teaspoon salt
  • 1 seedless cucumber,unpeeled, halved lengthwise and sliced thin
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh lime juice
  • 1/4 cup sugar
  • 1/4 cup fresh basil leaves
  • 1/2 cup chopped Peanut Shop Handcooked Virginia Peanuts (lightly salted)
  • 1/4 cup chopped cilantro
Directions:
In a medium bowl combine lime juice, sugar, red pepper and salt. Add sliced cucumber, basil and cilantro. Stir to combine. Sprinkle each serving with peanuts.

Makes: 6 servings

Recipe Tip: -To chop peanuts, place in a heavy duty quart size self-sealing plastic bag. Crush peanuts with a rolling pin into small pieces.
